Abstract:

ALMONDS ARE HIGH ENERGY NUTS AND RICH IN UNSATURATED FATTY ACIDS. IN ADDITION THE COMPLEX MATRICES OF ALMOND CONTAIN MANY BIOACTIVE COMPOUNDS SUCH AS A-TOCOPHEROLS, AND PHENOLIC COMPOUNDS, WHICH ARE HIGH IN A VARIETY OF HELPFUL ANTIOXIDANTS OR PHYTOCHEMICALS THAT SHIELD AGAINST THE DAMAGING EFFECTS OF FREE RADICALS. THE PHENOLIC COMPOUNDS WERE IDENTIFIED NOT ONLY IN ALMOND AND ITS SKIN, BUT ALSO IN SHELL AND HULL. THE ESSENTIAL FATTY ACID PROFILE, PHYTOCHEMICAL COMPOUNDS AND DIETARY FIBER PROBABLY LEAD TO ALMOND IDENTIFICATION AS A FUNCTIONAL FOOD. BECAUSE OF THEIR UNIQUE COMPOSITION, ALMOND CONSUMPTION COULD BE USEFUL TO DECREASE CHOLESTEROL AND PROTECT HUMANS FROM CORONARY ARTERY DISEASES, LIPID OXIDATION, DIABETES AND COLON CANCER. AND ALSO ALMONDS ARE LIKELY TO BENEFIT NEWER CARDIOVASCULAR RISK BIOMARKERS, SUCH AS LDL OXIDIZABILITY, INFLAMMATORY MOLECULES, AND ENDOTHELIAL DYSFUNCTION.

Abstract:

Purpose: Food security is a critical global challenge that is influenced by research and innovation in the field. Therefore, the objective of this study is to analyze the scientific output of developing countries in food security and examine its relationship with patents and Gross Domestic Product (GDP).Methodology: This applied research utilized the Scientometric approach. A total of 8,416 papers published between 1992-2023 in the field of food security by developing countries were included in the study using citation databases from Clarivate Analytics. Additionally, patent registrations from the WIPO database and GDP data from the World Bank were analyzed. Information was collected through note-taking, and the data was analyzed using Pearson's correlation coefficient.Findings: The findings reveal an upward trend in the publication and citation of scientific outputs related to food security in developing countries. China has higher numbers of papers, patents, GDP, and food production index compared to Iran, Japan, and South Korea. There is also a positive correlation observed between population and the number of papers, gross production and the number of papers, food production and the number of published papers, as well as the number of patents and papers citing scientific outputs of countries. Conclusion: These results highlight the significant relationship between increasing scientific output, GDP, the number of patents, and food security. Greater emphasis on food security contributes to enhanced scientific output, GDP, and innovation. Similarly, increasing scientific output, GDP, and innovation positively impact food security in countries.Value: This study emphasizes the importance of scientific outputs in driving technological advancements, innovations, and ultimately, ensuring food security in developing countries.

Abstract:

In recent years, the idea of the physiological and nutritional effects of food, beyond what was widely accepted, dramatically sweeping the world Due to the high cost of health care and increasing incidence of non-communicable diseases, these type of food products that claim to help prevent and treat some of these diseases, have a special significance. So, countries should have legislation and regulations for the safe production and scientific and administrative methods to control health claims for these products development. The purpose of these legislation and regulations, are consumer protection, promote fair trade, creating incentives for research and innovation in the food and supplements industries. Determining the daily amounts of active components in these products which provide their health claim on the one hand and setting the maximum amount of their intake which doesn’t put the consumer in the risk of excessive intake in the other hand are among the most important challenges in front of scientists and regulators. Moreover, providing accurate and clear information to consumers about the safety of this product in order to help them to make right decisions and choose appropriate food products, is another issue of importance in the current global regulations. This paper discusses the challenges facing the development of laws and regulations relating to these products.

Abstract:

Today, many different methods are applied for the correct use of foods and to prevent their deterioration. Ensuring healthy conditions for people in food consumption and consumption of healthy foods is very important for human welfare. In this study, food spoilage, the factors that cause food spoilage, its effects on a global basis, food transport systems (cold chain) and measures that prevent or delay food spoilage are discussed.
